Cranberry Citrus Bars

These Cranberry Bars (Starbucks Copycat) are a delicious, festive treat, perfect for the holidays or any time you crave something sweet and fruity. With a soft base filled with white chocolate chips and dried cranberries, and topped with a tangy cream cheese glaze, these bars are sure to become a favorite!

Ingredients

Plant-based butter 1 Cups
Brown sugar 1 1/2 Cups
Eggs 2
Orange extract 1 Teaspoons
Vanilla extract 1 Teaspoons
Ground or freshly grated ginger 1 Teaspoons
Baking powder 1 Teaspoons
Salt 1/2 Teaspoons
All purpose flour 2 Cups
White chocolate chips 1 Cups
Dried cranberries 3/4 Cups

Glaze

Cream cheese 8 Ounces
Confectioners sugar 1 1/2 Cups
Orange extract 1/2 Teaspoons
Vanilla extract 1/2 Teaspoons
White baking chocolate 2 Squares
Dried cranberries 1/3 Cups

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, beat together the butter and brown sugar until light and fluffy.
  3. Add in the eggs, orange extract, and vanilla extract. Beat until mixed well.
  4. Mix in the ginger, baking powder, and salt. Gradually add the flour and beat until just blended. Be careful not to overmix.
  5. Stir in the white chocolate chips and dried cranberries by hand until evenly distributed throughout the dough.
  6. Spread the mixture evenly into the prepared baking pan and bake for 18-22 minutes, just until the bars are set and golden brown.
  7. Remove from the oven and let the bars cool completely before adding the glaze.
  8. In a medium bowl, beat together the cream cheese and powdered sugar until smooth.
  9. Add in the orange extract, vanilla extract, and melted white baking chocolate. Mix until well combined.
  10. Drizzle the glaze over the cooled bars and sprinkle the top with 1/3 cup dried cranberries.
  11. Allow the glaze to set before cutting into bars and serving.
