Instructions
- Toast the shredded coconut and pecans in a dry skillet over medium heat until lightly browned and fragrant, about 5 minutes. Set aside 1/3 of the mixture to stir into the filling, and reserve the remaining 2/3 for topping.
- In a medium saucepan, whisk together the egg yolks, cornstarch, coconut milk, half and half, sugar, and salt until smooth.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil. This should take about 5-7 minutes.
- Once the mixture has thickened, remove it from the heat and stir in the toasted coconut and pecans (1/3 portion), butter, and vanilla extract until the butter is melted and the mixture is smooth.
- Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- Pour the coconut cream filling into a pre-baked pie crust and smooth the top with a spatula. Allow it to cool to room temperature, then refrigerate for at least 2 hours to set.
- Once set, top the pie with the remaining 2/3 of the toasted coconut and pecans for a crunchy finish.
