German Chocolate Coconut Pie

Egg Yolks Pieces 4
Cornstarch Cups 1/4
Coconut Milk Ounces 14
Half and Half Cups 1
Sugar Cups 2/3
Salt Teaspoons 1/4
Coconut Cups 1
Butter Tablespoons 2
Vanilla Teaspoons 1
Heavy whipping cream Cups 1 1/2
Confectioners sugar Tablespoons 3
Vanilla Teaspoons 3/4
Chopped pecans Cup 3/4
Shredded coconut Cup 3/4

Instructions

  1. Toast the shredded coconut and pecans in a dry skillet over medium heat until lightly browned and fragrant, about 5 minutes. Set aside 1/3 of the mixture to stir into the filling, and reserve the remaining 2/3 for topping.
  2. In a medium saucepan, whisk together the egg yolks, cornstarch, coconut milk, half and half, sugar, and salt until smooth.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil. This should take about 5-7 minutes.
  4. Once the mixture has thickened, remove it from the heat and stir in the toasted coconut and pecans (1/3 portion), butter, and vanilla extract until the butter is melted and the mixture is smooth.
  5. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  6. Pour the coconut cream filling into a pre-baked pie crust and smooth the top with a spatula. Allow it to cool to room temperature, then refrigerate for at least 2 hours to set.
  7. Once set, top the pie with the remaining 2/3 of the toasted coconut and pecans for a crunchy finish.
  8. Optional: Add whipped cream before serving, if desired.
